Deep within the rock tunnel inside Liziba Bomb Shelter lies a local restaurant where we could sit at vintage wooden tables and eat authentic Chongqing hotpot.
A trip to Chongqing will not be complete without trying its famous hotpot. The visual contrast of swirling white steam rising from a bright red, spicy beef tallow broth against the dark, ancient rock walls delivered the ultimate Mountain City (山城) vibe. The naturally insulated rock kept the entire cave at a breezy, cool temperature (around 25°C) year-round. It provided total relief from the humid mountain city heat while our hotpot boiled.
It's really a unique experience to have hotpot in such a setting and atmosphere.
